Gluten free Vegan banana bread


  • 150 g of corn starch

  • 75 g of cassava starch

  • 75 g of rice flour

  • 1 tsp of salt

  • 1 tsp of baking powder

  • 40 g of crushed walnuts

  • 3 tablespoons of chia seeds

  • 1 tsp lemon juice

  • 125 m of coconut or almond milk

  • 125 ml of oil

  • 200 grams of sugar


Preheat the oven to moderate heat. In a bowl, combine the flour, salt and baking powder. Mix them and sift. Separately, place the two mashed bananas, the chia seeds, the lemon juice and the vegetable milk in a container and process (it can be in a blender) briefly so that the chia is crushed a little. Pour the crushed nuts into the bowl of flour and stir. Add the dried ones to the preparation of the bananas until they form a homogeneous paste. It is important NOT to blend or process at this stage so as not to break the walnut pieces. Pour the preparation into a pudding pan with parchment paper and bake for 40 minutes over moderate heat.
